I make green eggs and ham for breakfast to celebrate Dr. Seuss’s birthday and Read-Across-America Day by wearing pajamas, bringing in books, and reading. And to kick off that special event.
Last year, I tried to convince the boys that my (regular) eggs were, in fact, “green” because they were organic and free-range. They objected and said that I could, actually, put in green food-coloring just this one day a year and it would be fine. Riley reminded me about our discussion about moderation.
So, this year – without the slightest hesitation – I plunked a few drops of green food-coloring into the scrambled eggs and served them in a croissant with some bacon.
I can’t win! What a difference a year makes! I suppose I should be grateful. So, maybe this is the last year of the Mann-clan Green Eggs and Ham Breakfast.
Do you Like Green Eggs and Ham? These are made out of Gluten Free Pancakes and fruit, so even if you don’t like eggs/ham, you might like this breakfast! (Note: I usually don’t like using gluten free mixes because they are low in nutrition and fiber, but I make an exception for pancakes… plus this mix is made with flax seed, so the nutrition and fiber is much higher then other mixes.)
I did not make the pancakes the way the box said to, instead of the milk, sugar, oil and eggs I used Almond Milk, Mashed Banana, Applesauce, and Egg Beaters.
